Sautéed Eggplant and Pork

Ingredients:

2 Tablespoons Lee Kum Kee Hoisin Sauce
3 Tablespoons Lee Kum Kee Soy Sauce
3/4 Cup Water
1 Tablespoon Minced garlic
1/4 Teaspoon Red pepper flakes
3 Teaspoons Vegetable oil
1/2 Pound Ground pork
1 Teaspoon Sesame oil
1 1/2 Pounds Japanese eggplant, quartered and cut into 1-inch pieces
Hoisin Sauce

Directions:

  1. Saute pork in 1 tsp oil for about 4 minutes until browned. Set aside.
  2. Sauce eggplant in 2 tsp oil and sesame oil for around 3-4 minutes.  Pour mixture of Lee Kum Kee Hoisin sauce, Lee Kum Kee Soy Sauce, water, garlic and red pepper flakes.
  3. Reduce heat and cover, cook until soft and tender, for about 15 minutes. Pour Sauce over the pork.

Makes 4-6 servings.
