Sautéed Eggplant and Pork
Ingredients:
| 2 Tablespoons
|
Lee Kum Kee Hoisin Sauce |
| 3 Tablespoons
|
Lee Kum Kee Soy Sauce |
| 3/4 Cup
|
Water
|
| 1 Tablespoon
|
Minced garlic |
| 1/4 Teaspoon
|
Red pepper flakes |
| 3 Teaspoons
|
Vegetable oil |
| 1/2 Pound
|
Ground pork |
| 1 Teaspoon
|
Sesame oil |
| 1 1/2 Pounds
|
Japanese eggplant, quartered and cut
into 1-inch pieces |

Directions:

Saute pork in 1 tsp oil for about 4 minutes until browned. Set aside.

Sauce eggplant in 2 tsp oil and sesame oil for around 3-4 minutes. Pour
mixture of Lee Kum Kee Hoisin sauce, Lee Kum Kee Soy Sauce, water, garlic and
red pepper flakes.

Reduce heat and cover, cook until soft and tender, for about 15 minutes. Pour
Sauce over the pork.
Makes 4-6 servings.
